Dairy free vegetarian appetizers stay cool and crisp even in the summer heat. A variety of stuffings offer tasty nibbles for everyone. The featured vegetarian appetizers include guacamole, carrot ginger and hommus dips with snap pea pods, mini bell peppers, escarole and cherry tomatoes. 





Cut mini bell peppers in half and fill with hommus for a colorful and crunchy treat.







Cut cherry tomatoes in half and remove the seeds and internal membrane. 









Stuff the tomato halves with guacamole, hommus and carrot ginger dip. 








These appetizers are created with pickled sweet red peppers and pickled garlic from a grocery store olive bar. Pat the peppers dry and stuff with carrot ginger dip or hommus. Insert a pickled garlic into the center. Talk about a party in your mouth! 




Remove the string from sugar snap pea pods on the inner seam. Gently run a knife across this seam to open the pod. Leave the seeds inside the pea pods. 





Fill with guacamole, hommus or carrot ginger dip. 



Garnish your vegetarian appetizers with a bit of parsley, purslane or yellow wood sorrel.

Tips: 
  • Make the appetizers ahead and store covered in the fridge. 
  • Puree leftover appetizers and use in spaghetti or soup.
