Gluten Free Lemon Ginger Marinate

Lemon Ginger marinate boosts up the flavor for savory grilled, sautéed, roasted or baked chicken. Enjoy marinated gluten free oven fried chicken legs (recipe below) for a tasty dinner or lunch box treat, or marinate whole chickens for roasting.

Ingredients:
 ½ Cup Canola oil
Zest, juice and pulp of one lemon
1 Tablespoons balsamic vinegar
1 Tablespoon fish sauce (anchovy extract) or gluten free Soy Sauce
2 Tablespoons Toasted Sesame Oil
2 Tablespoons grated ginger
2-4 minced garlic cloves
Pepper to taste
Salt to taste
1 teaspoon Italian Seasoning


Wash and dry the lemon. Collect the zest (yellow outer skin) with a micro-planer or grating tool.

Cut open and lemon and squeeze the pulp and juice into a small bowl or glass measuring cup.

Add the lemon zest, vinegar, fish sauce, grated ginger, crushed garlic and seasonings. Stir in the canola and toasted sesame oil until well blended. These oils stay fluid when refrigerated, making it easy to turn the marinating bag.

Place skinned chicken pieces in a gallon sized plastic zipper bag. Pour the marinate over the chicken, squeeze the excess air out and seal securely. Turn the bag over a few times to evenly distribute the marinate. Place in the refrigerator for several hours or overnight. Flip the bag over once or twice.

Marinated Whole Roasting Chickens

Prepare one cup of marinate per chicken. The basic marinate recipe was adapted to include lemon grass and Kefer lime leaves for the featured chickens. Place into gallon sized zipper bags and pour the marinate over the chickens. Squeeze out the air while sealing the bag to fully coat the chicken. Place in the fridge overnight, turning neck to back often to allow the marinate to seep into the cavity of the chickens.

Preheat your oven to 425 degrees. Cover the roaster with a lid or foil and cook for 20 minutes. Turn the heat down to 350 degrees. Remove the lid and continue roasting until done, about 2 hours more.  Turn the chickens over about every 1/2 hour. The leg tips and ginger gets crunchy and dark from the oil, but the chicken meat is super juicy and flavorful.

Gluten Free Oven Fried Chicken Legs

Remove the skin from the chicken legs with a kitchen scissors or a knife. Cut a couple of slices in the meaty part of the leg for richer flavor. Place the chicken legs into a gallon sized plastic zipper bag and marinate with Gluten Free Lemon Ginger Marinate for several hours or overnight. 

Preheat your oven to 425 degrees. 

Cover a baking sheet with foil for easy clean up. Coat the foil lightly with spray cooking oil to prevent sticking.

Dredge the marinated chicken legs in gluten free pizza crust mix or gluten free all-purpose flour. 

Bake for 50 minutes, turning once after 30 minutes.
