Kale is a super vegetable packed with vitamins, anti-inflammatory and anti-cancer nutrients. Kale belongs to the Brassica family. Curly green kale has a robust taste, red or purple is more mild. One cup of cooked kale with walnuts has 155 calories, 11 g. carbohydrate, 5 g. fiber, 6 g. protein, 382% RDI vitamin A, 55% vitamin C and 18% calcium.
Ingredients: 1 bunch kale 1/4 cup broth or water 1 tablespoon lemon juice 1 teaspoon lemon grass 1 tablespoon grated ginger 2 cloves garlic 1 tablespoon vinegar 1/2 cup walnuts 2 teaspoons Gamasio (sesame seed sprinkle)
Wash the kale. Stack the leaves and slice into 1/4 inch strips. Discard the bottom of the stem. Sprinkle the kale with lemon juice.
Heat the broth or water in a skillet. Add the kale, ginger, garlic and lemon grass and saute until the kale is wilted, about 8 to 10 minutes.
Remove from heat. Sprinkle with vinegar, Gamasio and walnuts. Serve warm.
