How to make Egg Frittata

Egg frittata is a gourmet dish sure to please family and guests.  Light and fluffy like quiche with favorite ingredients found in an omelet, it is a chef’s secret how easy it is to prepare.  Serve frittata hot or cold to your family, on a buffet line, or as a lunchbox treat.

Ingredients:
6 eggs
1/4 cup milk 
chopped vegetables
diced meat (optional)
spices
1 TBSP oil or butter
9 inch pan with oven safe handles

 Preheat your oven to 350 degrees.  Choose a skillet that is oven safe.  Call the manufacturer if you have any questions about the handle on your pan.  If you do not have an oven safe pan, you can still cook in a casserole dish.  See notes below.

Dice the ingredients.  Use vegetables, meats, herbs, cheeses, and even left over pasta with sauce.  The featured frittata has gluten free Canadian bacon, green onion, red bell pepper, celery leaves, olives, tomatoes, and spinach.  


Lightly beat the eggs, ¼ cup milk, and seasonings.  Use six eggs for a 9-inch skillet. Use more or less eggs to fit the size of your oven safe skillet. 







Sauté the meat and hearty vegetables in 1- tablespoon oil over medium heat.  Reserve delicate vegetables (tomato, greens, olives), cheeses, and herbs for the next step.





Stir in the delicate ingredients and pour the egg mixture on top.  Do not stir.  Allow the eggs to cook until it is bubbly in the middle and the edges are firm. 


Turn off the stove and place the pan on the center rack in the preheated oven.  Bake for 5-to 8-minutes, until the center is cooked through.  

Take your frittata out of the oven and let it set for a minute or two.  Cut into wedges and serve.

Tips:
You can keep the frittata warm in the turned off oven or by covering with a lid or foil.  

If you do not have an oven safe skillet place the sautéed vegetables in a casserole dish and place the beaten eggs on top.  Bake in a 350-degree oven for 15 minutes or until a knife inserted in the middle comes out clean.

Make your frittata with egg whites to reduce calories and carbs by 2/3 and eliminate cholesterol. Please note this will eliminate vitamin A, vitamin D, and folate, all of which are found in the yoke.
