Gluten-Free Soy-Free Fried Rice

Fried rice is quick and easy to make from leftover rice or gluten free tiny grains of amaranth, quiona and millet. Kids love fried rice because they get to use their chop sticks and best of all, it includes a full days serving of vegetables! 

Ingredients:
  • leftover rice or tiny grains
  • 2 cups frozen diced mixed vegetables
  • fresh vegetables such as green onion and bell pepper
  • 1 egg
  • 2 tablespoons Lea and Perrins Worcestershire sauce
  • 1 teaspoon Thai Kitchen Original Pad Thai Sauce
  • 1 tablespoon oil


Place about a cup of frozen diced vegetables in a small dish and thaw on the counter for about 1/2 hour. Alternately, place in a microwave safe dish, add 1 teaspoon water and cook on high for about one minute. You don't want to cook the vegetables, just thaw them so they are not frozen or iced together. Set aside.

Chop fresh vegetables and set aside. The featured recipe has green onion and colorful bell peppers.


Place one tablespoon oil in your frying pan. Turn the heat to medium high. If your pan is not non-stick you may have to use more oil. 

Add leftover rice or tiny grains when the oil is hot. The featured dish used thawed white rice from the freezer and leftover tiny grains from the fridge. Break the grains up into an even layer in your pan. 


Fry the rice for about five minutes, turning occasionally with your spatula.

Add one tablespoon of the soy free Worcestershire sauce. 

Add the fresh chopped vegetables and continue frying until the rice is slightly browned, about five minutes.


Stir in the thawed mixed vegetables and stir them in. 

Add the remaining tablespoon of Worchestershire sauce and a teaspoon of the Pad Thai sauce. The featured recipe is mildly spicy, add more Pad Thai for medium spicy.




Push the rice to one side and crack the egg into the pan. Add two eggs if you like more. Scramble the egg on the side of the pan. 


When the egg is done, mix it into the fried rice and vegetables. Heat for one minute more and serve warm.

Tips:
  • Add cooked chicken or shrimp.
  • Add sliced ginger or lemon grass for a lemony flavor.
  • Freeze leftover rice or grains in zipper bags. Rice and grains will freeze for months until you have enough to make fried rice.
