Fruit pizza is as much fun to make as it is to eat. This recipe is gluten and dairy free to accommodate special diets. Make gluten free fruit pizza for a family dessert, pot luck or party and enjoy rave reviews about the beautiful presentation of this delicious dessert. 

Gluten free cookie crust
  • ½ cup powdered sugar
  • 1/3 cup granulated sugar
  • 1/3 cup GFCF margarine or shortening
  • 1 large egg
  • ½ teaspoon salt
  • 2 teaspoons GF vanilla
  • 1 ½ cup GF baking mix.
If GF flour is used, add:
  •   1 teaspoon xanthan gum
  •   1 ½ teaspoon GF baking powder
(These are included in baking mix)


Preheat oven to 325. If you are using a baking stone preheat it too.

Cream together the sugars, margarine, egg, salt and vanilla. Scrape the sides of the bowl. Blend in the flour and beat until the dough begins to form into a ball. This is a soft dough.

Place blobs of dough onto a cookie sheet or preheated baking stone. Gently pat into a circle. If you are using a heated stone, work quickly as the dough begins to cook and becomes like a soft pancake. Bake for 18 to 20 minutes, until the edges of the cookie are brown and the center is cooked through. The cookie will rise up and then fall when the center is done. 

Cool the cookie for a few minutes, then gently loosen from the baking sheet with a spatula. Slide the cookie onto a cutting board or your serving plate. Cool completely before the next step.


Prepare your fruit:

This fruit pizza included:
  •   2 kiwi
  •   5 strawberries
  •   halved grapes 
  •   blueberries
  •   blackberries

Any seasonal fruit can be used. Dip bananas, peaches or other fruit that turns brown in lemon juice to delay browning.

Tip: arrange the kiwi, peaches or other limited fruit on a cutting board to get an idea of the diameter of the fruit circle before placing on the pizza.

Dairy free filling
:
  •   One 7 ounce package Creamed Coconut
  •   ¼ cup hot water
  •   ¼ cup powdered sugar

Place the creamed coconut in a bowl. Add the hot water and set aside for a couple of minutes. As the coconut softens, break apart with a fork until all the lumps are gone. Stir in the powdered sugar.

Frost the cooled cookie crust with the coconut filling. 










Add the prepared fruit in circles. Start in the center and work your way out. Alternate colors of fruit for best presentation. You can write names, make hearts or flowers; be creative and make your fruit pizza a work of art!



Chill the completed pizza until set. The coconut filling will have the texture of firm frosting. 


Slice the fruit pizza with a pizza cutter. Fruit pizza is best the day you make it. Store any leftovers in the fridge and consume the next day.

Party idea:
Make mini pizzas for individual servings and let family or guests decorate their own. Cut the fruit pieces smaller to allow for creative designs. Chill for ½ hour before eating.
